Ingredients (12 Muffins):
1 1/2 cups of all-purpose flour
1/2 cup of oat flour
1/2 cup of almond flour
2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoonof salt
1/2 cup of unsalted butter, softened
1/2 cup of brown sugar, packed
1/4 cup of honey or maple syrup
2 large eggs
1 teaspoon of vanilla extract
1 cup of Greek yogurt (or plant-based yogurt for a dairy-free option)
1 teaspoon of shilajit, dissolved in 2 tbsp hot water
1 1/2 cups of fresh or frozen blueberries
Lemon zest for garnish (optional)
Instructions:
1. Preheat Oven:
Preheat your oven to 350°F (175°C).
Line a muffin tin with paper liners.
2. Dry Ingredients:
In a bowl, whisk together all-purpose flour, oat flour, almond flour, baking powder, baking soda, and salt. Set aside.
3. Wet Ingredients:
In a large mixing bowl, cream together the softened butter, brown sugar, and honey/maple syrup until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
4. Shilajit Infusion:
Dissolve Shilajit in 2 tablespoons of hot water and add it to the wet ingredients. Mix well.
5. Combine Wet and Dry:
Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt. Begin and end with the dry ingredients. Mix until just combined.
6. Blueberry Fold-in:
Gently fold in the blueberries, being careful not to overmix. If using frozen blueberries, toss them in a bit of flour before folding them into the batter.
7. Fill Muffin Cups:
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
8. Baking:
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the centre comes out clean or with a few moist crumbs attached.
9. Cooling:
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
10. Garnish (Optional):
Garnish with lemon zest for a burst of citrusy freshness.
