Ingredients (Makes approximately 8 pancakes):
Dry Ingredients:
1 cup of all-purpose flour
2 of tablespoons oat flour
1 of tablespoon sugar
1 of teaspoon baking powder
1/2 of teaspoon baking soda
1/4 of teaspoon salt
Wet Ingredients:
1 cup of buttermilk (or milk of your choice)
1 large egg
2 tablespoons of melted butter or coconut oil
1 teaspoon of vanilla extract
1 tablespoon of shilajit dissolved in 2 tablespoons of hot water
Berries:
1 cup of mixed berries (blueberries, strawberries, raspberries)
Optional Toppings:
Maple syrup Greek yogurt Additional fresh berries for garnish
Instructions:
1. Prepare Shilajit:
Dissolve 1 tablespoon of Shilajit in 2 tablespoons of hot water. Set aside.
2. Mix Dry Ingredients:
In a large bowl, whisk together the all-purpose flour, oat flour, sugar, baking powder, baking soda, and salt.
3. Prepare Wet Ingredients:
In a separate bowl, whisk together the buttermilk, egg, melted butter or coconut oil, vanilla extract, and the dissolved Shilajit mixture.
